Fruit Pizza Recipe

Due to a request I am posting the yummy fruit pizza recipe... compliments of my sister Lisa. :) Enjoy!!

Fruit Pizza

1 roll of Slice and Bake sugar cookies (or break and bake)
1 banana
1 small can of mandarin oranges
1 small container of frozen strawberries
(kiwi optional)
1 package crushed pecans
1 large cream cheese
½ cup sugar
1 teaspoon vanilla
2 tablespoons cornstarch

Bake the cookies per the instructions, except: place the sliced cookie dough 1 inch apart on the cookie sheet. Drain and save all juices from the fruits. Mix cream cheese, vanilla, and sugar. Spread on top of cool cookies. Place the fruit on top of the cream cheese and sprinkle with nuts. Over a low heat thicken the juices with cornstarch. (Mix 2 tablespoons of cornstarch with 2 tablespoons of water before mixing with juices.) Cool and drizzle on top of the fruit. Chill, then serve.

(Note: To do the mini fruit pizzas, you just make the cookies individually.)


EDIT: As you can see... we did not put everything on our pizzas. We just did the oranges, kiwi, and strawberries. Also this picture was taken before the drizzle was put on. :)

Very Cool! I have been making the full sized fruit pizza per Pampered Chef for years now. Love the minis! (minus the nuts of course! LOL)
